Caricature of a person (from a photograph), incorporating a Bull's body and a logo for a home bar - see names in project details

We are seeking a caricature of a friend for their 50th Birthday - he is nicknamed "The Bull" and photographs of "The Bull" are attached. The output will be a cartoon/drawing which will represent The Bull with a bull's (the animal) body with a human head portraying the person in the supplied photographs.
An image from which inspiration may be drawn is attached in the files called "Mad Bull's Tavern example 1 & 2". We are open to your artistic interpretation of a bull that is full of energy and ready to tackle anything.
The drawing will feature as a caricature portrayal and also act as a logo for the Bull's backyard bar which is named "The Crab Pot". Note - crab pot refers to the traps that are set to catch live crabs - photos of crab pots attached (product shop and a photo in use).
We would like to incorporate bull horns in the caricature, and this should also include flared nostrils with an intense/focused stare and a happy/positive attitude. Photo references attached - Bull (Stare), Bull (smile), Bull Headshots
The tattoo in the example illustration says "MUM" we would be happy to have the word "WOW" incorporated in a tattoo on the bicep or appropriate place if this can be done in a creative way, alternatively we are happy to exclude this.
The slogan "All time" could be incorporated for the "The Crab Pot" logo, location is Gold Coast - again this is not mandatory.
Outputs - we would prefer Illustrator, PhotoShop or jpeg file (high res).
If the image is hand-drawn we would like high-res scans if possible depending on the timing to receive the original.
