baseball card collectible commerce site

I would like to develop a site similar to the following: [login to view URL] Will probably have a welcome page, sets, teams, and singles and a contact page. Would like a simple back end that would allow me to type items into the database and update the list easiliy. Ideallly when an item is puchased, it would disappear from the inventory. I would like to an "invoice/shipping list" produced when an order is placed. I will provide layout and photoshop files. I must admit this is somewhat uncharted territory for me...I have developed many sites with programmers, but this is one I am producing and will be using myself. I would be open to suggestions on how to most efficiently produce the product and will likely also need some consulting on hosting and updating.
