a chef to prepare rare food for a labor day party

I will be hosting a labor day party. Every year I try to present the attendees with a unique food experience. I need a chef who knows how to cook/prepare rare meats. If possible I would like someone who is able to develop great preparations of 3-4 items of meats like ostrich, insects, snake, or exotic fruits, whatever and create a sampling plate.
