Customize a Google Sheets document by modifying (a) menu items (b) tool bar, and (c) available functions

I'm an educator and I use Google sheets on training courses to practice for accounting exams. The skill required for this project is 'google apps script' However, Google sheets has more functionality than the examination system: I want Google Sheets to replicate the examination environment with 3 modifications: 1) Only 3 menu items should be available. I show this in the attached screen shot 2) The options in the menu items should match what I show in the screen shot 3) The spell checker should be turned off, so you don't get the red line for misspelled words 4) the functions available should be limited to those in the attachment 4) I would like the right click modified, but I don't know if this is possible I would like the job done by Friday, Dec 15.
