We are looking to implement a load-balancing system for several servers. As these will be located in different datacenters, and we do not want to publicize the servers' IP addresses, the best approach looks to be IP tunneling through the LVS system.

HI, usually deal with LVS, heartbeat and so on. I'll be glad to help you. Anyway even with LVS+NAT you won't publicize RSs ip addresses. Even keepalived could be a good fit for your job. Best Regards!
RHCSA/RHCE in server setup and configuration also troubleshooting will be added advantage to get work done.
ARP issue and udp/tcp traffic etc need to be taken care to get it done perfectly.
