Hi, I have been developing websites with Joomla since 2008. I have completed a number of projects here on freelancer.com. I suggest you check my reviews. For your project I would recommend the use of an extension called Seblod. Seblod will allow you to define as many fields as required on your articles and will also help assign multiple categories to single articles. In addition once you have defined your content types (in Seblod terms a collection of fields and layouts) you can export them as an application that can be installed on another Joomla site.
