I am a 20-year educator who shifted careers, though not without a lot of struggle and a little luck. I don't have specific advice on the summary statement, as I am working on that myself. However, it does depend on what industry you are trying to enter. I moved in to the training & development area, but while applying to all jobs, I used the job description to guide what I put on my resume (key words!!). Apparently it is good to be able to offer data, so while you may not have sales numbers, you likely have some sort of "data" from your successes in education. What educators do in the classroom can be applied to a business model - think of things like end users, implementation, technology use, growth, data-driven instruction, (curriculum) development, results, working toward and achieving goals, managing others, managing data, etc.
