Custom Winery Shopping Cart URGENT

We are reposting this project as we got the stuff around by the last developer, he took a deposit and now won't reply for two weeks after accepting the job.

So it's now URGENT and we need someone to update us daily on the job, and give us realistic deadlines for this project. Our client is becomng impatient, and we need to show them results. Professional coders please, we don't want an oscommerce template.

We are looking for an e-commerce solution for a small boutique winery. The design for the web site has already been approved so we need to strictly stick to it - we just need the back end.

When someone adds the wine they want and are happy they'll click the 'Process My Order' button on the right

They need to be taken through this checkout process:

Step 1) [url removed, login to view]

On this page they choose the Australian 'State' they live in, and it shows the per case price for that 'State' below.

Step 2) [url removed, login to view]

This is where the customer can remove or change the quantities of the wine, plus the postage must calculate based on how many cases on which state they chose on step 1. Since the customer can purchase a case and/or single wines, it must calculate the singles wines up to the case cost (12 wines to a case).

Here is where they'll enter their shipping information etc.

This is the final step, it needs to have put the credit amount down the bottom as calculated on step 2. And once they click submit my order it needs to send all the information they have inputted over the last few steps to an email address nicely formatted.

As mentioned we need to stick to our design, and it's a must you have experience in this sort of project.

There are roughly 13 wines to be put on at the moment, however it should be simple for us to add more products by adding lines of code, or however you suggest.
