Magento Community Installation w/ Limited Customization

We are a nonprofit Golden Retriever rescue organization based in Minnesota. We are looking for someone to install Magento Community for our very limited e-commerce needs. We will likely never have more than 30-50 products for sale at any given time.
In conjunction with the Magento Community installation, we need to have the ability for people to make donations online and to submit adoption application fees. All credit card transactions will be handled through Virtual Merchant.?
Our current site is an outdated monstrosity that uses CGI scripts to write to a database. So part of your job will be to recommend a solution for collecting the flat table data we need along with setting up the credit card transaction. For example, when someone submits an application to adopt a dog, their responses must be collected and the application fee charged through Virtual Merchant. Is this a customization to the Magento platform? Or is it conducted completely independently? We will need direction on this.
Lastly, if possible, we would need some brief tutelage from you on how to make future minor adjustments ourselves, such as setting up links for seasonal fundraising and special pleas as they arise.
Timing is flexible. Would like the job started within 5 days and completed within 21.
## Deliverables
Virtual Merchant (our credit card gateway) requires that an e-commerce site be created so they can see the pages and policies before they will approve an account and provide transaction functionality.?
This project will not be considered complete until transaction capability with Virtual Merchant is established.
Experience with Magento and Virtual Merchant is highly desirable.
UPDATE: Some have asked whether design is a part of this project. The answer is no--we will want you to install Magento with a to-be-determined pre-made theme, whose images we will customize for our needs. Thank you for your bids!
