I propose to create a Unique Delivery Number for each delivery, which will be assigned to your riders. Payment method will be attached with the Delivery number. So you can track how much one rider has to pay. It will only include the cash payment method. Daily sales / accounting is built in with this because daily sales is accounted through delivery number. A separate sheet would be made for Inventory tracking. You need to five me a list of all inventory items and then it can be easily made.
