Adding fixed category to established Oscommerce store

We already have a store set up using Oscommerce 2.2 with a custom layout – thebridesboutique co uk. It has a fixed menu bar at the top that has set categories, which cannot be edited from the admin section (i.e. adding a new product category won’t show up on this bar). I need a new category adding to match what is there currently (both store front and admin side) – the font size will need to be made smaller to make it all fit in the menu bar.
