I would take these 2D scans and create from it a digital 3D model that could then extract Plans to duplicate the scanned information, the advantage of the model would be that all the building information can be stored in its geometry and you could visualise its spaces in 3D. For me the 3D side of creating a digital AutoCAD file is easier than creating multiple 2D versions of the plans. From the size and scale of the building I estimate 2-3 days for the brunt of the modelling and the single day for exporting digital AutoCAD Plans. I have an expert knowledge of architectural spaces and can read the drawings provided, any and all information retained in the scans will be replicated in 3D space and provided in 2D form.
