I would like to detect the entire frequency range of a piano which spans from 25 Hz to 4700 Hz.
Using an ARDUINO MEGA, Sparkfun sound detector LMV324.
I tried using Arduino's FFT library and it did not work on lower frequencies than 200 Hz.

Hi , I am an electronics and communication engineer with 6 years experience in signal processing and embedded system and 4+years experience in speech technology. In my opinion your requirement is not possible with arduino as the sampling frequency of arduino is not sufficient for audio signal.
My recommendation is to use Raspberry pi and sound card. as hardware.
In that I can display all the frequency component of the piano sound.
