Organize an Illustrator file better

We have an A3-sized diagram that is complex Adobe Illustrator file that is not organized well and needs to be cleaned up. It is hard to select things and move them around. We would like someone to organize it into Layers (and Groups if necessary). Each small project (logo, title, description, url) should be in its own Layer. Any text that has been turned into outlines should be reverted back to text that can easily be edited and selected. This is not creative design work but re-organization, cleaning things up. It will probably take 4-5 hours.
