Linux Mail Plus Consultation

I am having an issue where the server is sending mail to root (about 5 each second). I have MANY cron jobs setup, but have put MAILTO="" at the top. Also, I've checked a few other items. Anyways, I need to stop these emails as they are filling up my maillog to where it becomes 1.5gb withing a week. I need assistance to stop these messages by walking me through via Skype. I would like to purchase 2 hours of your time as if we finish this quickly I also have other questions, so think of it more as consultation. My other questions: Why do my iptables keep getting erased (maybe every few months) and is there a work around. Any iptables advise (fill up any remaining time chatting about iptables).
